I'm looking to collaborate with someone who is using LEGO EV3 and Matlab (not Simulink). I trying to do what I consider simple programming, but I'm running numerous and ever changing problems.

You might try reaching out to LinkEngineering member Meredith Portsmore, who directs Tufts Center for Engineering Education Outreach (CEEO). CEEO has collaborated with LEGO to create curriculum using the company's robotic toys, and together Tufts and Lego run legoengineering.com, a resource site for educators.
